Recipe for Homemade Muffins or Buns (Also called Pancakes, Buns, Mantecadas)
Ingredients:
3 eggs.
200 grams of wheat flour.
190 grams of sunflower oil.
180 grams of sugar.
50 grams of milk.
1 lemon (zest).
7 grams of chemical yeast (baking powder).
1 teaspoon of cinnamon powder.
A pinch of salt.
Instructions:
- In In a bowl, mix the flour, baking powder, cinnamon powder and lemon zest with a spoon until well distributed.
- In another bowl, beat the 3 eggs until you get a foamy mixture. If you have an electric whisk, use it to achieve an airy dough. If not, you can beat the eggs manually with a whisk.
- Add the sugar little by little to the beaten eggs while continuing to beat. Then, pour the milk into the bowl and continue whisking. Add the oil gradually while continuing to mix with the whisk. Add a pinch of salt and mix well.
- Add the flour from the other bowl little by little, whisking constantly to avoid lumps. Make sure the dough is smooth and lump-free. Cover the bowl with plastic wrap and refrigerate it for at least an hour.
- Preheat the oven to 210°C. Then, take the dough out of the refrigerator and distribute it into paper capsules. Place the capsules in metal molds before baking so that the muffins keep their shape.
- We remove the bowl from the refrigerator and proceed to distribute the dough between the paper capsules. Before doing so, we place the capsules inside metal molds so that the muffins keep their shape and do not overflow in the oven. We fill the molds approximately 3/4 of their capacity.
- Once we have distributed the dough, we sprinkle a little granulated sugar on the surface. This will create a delicious crust, characteristic of muffins.
- Preheat the oven to 210°C. Then, we place the metal molds in the oven and bake for 15 minutes or until the inside of the muffins are cooked through. To check cooking, insert a toothpick into the dough; If when you remove it, there are traces of dough stuck to it, we extend the cooking for a few more minutes.
- After removing them from the oven, we leave the muffins in the metal molds for 5 minutes. Then, we remove them from the molds and place them on a metal rack to cool. Once cool, they are ready to enjoy! 😋
