How to make natural yogurt at home
Ingredients:
- 1 liter of fresh whole milk (can be from cow, sheep or goat)

- Cooking thermometer (optional but recommended)
- Glass or clay bowl
- Clean towel or cloth
- Oven or warm place to ferment
Instructions:
- Heat the milk:
- Pour 1 liter of milk into a clean pot and heat it until almost boiling (around 80°C).
- Remove the milk from the heat and let it cool until it reaches a temperature of 42 to 46 °C.
- Add the yogurt:
- Add 3 tablespoons of natural yogurt (with live cultures) to the warm milk.
- Mix well to incorporate the bacterial cultures necessary for fermentation.
- Fermentation:
- Transfer the mixture to a glass or clay bowl.
- Cover the bowl with a clean cloth and place it in a warm place, such as a preheated, turned off oven, for 8 to 10 hours.
- The ideal temperature for fermentation is around 42 °C.
- Cooling and rest:
- After fermentation, the yogurt will be ready.
- If you want plain yogurt, you can stop here and enjoy it.
- If you prefer Greek yogurt, place a strainer over a bowl and cover it with a clean cotton cloth or cheesecloth.
- Pour the yogurt over the cloth and let it drain in the refrigerator for 2 to 4 hours. This will separate the whey and give the yogurt a creamier texture.
- Storage:
- Transfer the yogurt to a covered container and store in the refrigerator for 5 or 6 days.
- Label the date and reserve some yogurt for the next batch.
