Taquera Verde Avocado Salsa
Ingredients:
- 12 green tomatoes
- 1 zucchini (zucchini), cut into pieces
- 1 sprig of cilantro
- 4 large serrano chiles
- 2 large cloves of garlic, crushed and peeled
- 1/2 small onion
- 2 celery leaves
- Oil for frying
- Salt to taste
Instructions:
- In a pot with water, cook the green tomatoes, zucchini and cilantro sprig until tender.
- Meanwhile, in a frying pan with a little oil over low heat, fry the serrano peppers, garlic cloves, onion and celery leaves. You can cover the pan to avoid hot oil splashing, but don't forget to prick the chiles. Once the chiles are soft, turn off the heat and let cool.
- Drain the tomatoes, zucchini and cilantro, and place them in the blender. Add the chiles along with all the oil in the pan. Add a generous pinch of salt. Blend until all the ingredients are well integrated.
- The sauce is ready to enjoy with Mexican appetizers, street tacos or any dish you desire. Don't forget to taste it and adjust the salt according to your taste! 😋
